Ingredients (for 4 servings): 
    For the pasta:  
100 g flour; 
1 egg; 
Pinch of salt 
Water
    For the filling: 
100 g  ricotta cheese 
1 egg; 
1 spoon Parmesan cheese; 
3 beet greens
Crespelle
(Stuffed homemade pasta)
Method: Finely chop
the beet greens and
add the ricotta cheese,
egg and grated Parmesan
cheese. Then prepare the
pasta dough by kneading
together the flour, egg,
salt and water. Cut the
dough into rectangular strips
and cook in boiling salted
water. Drain and let the
pasta dry. Then put a little
of the filling into each strip
and roll forming cannoli rolls.
Place in an ovenproof dish, cover with Béchamel sauce and cook in a hot oven for about 20 minutes. Serve.
