Ingredients (for 4 servings): 
Cime d'ortiche molto giovani; 
Very young nettle greens
Parmesan cheese
Eggs
Salt
Pepper
Nutmeg
Bread crumbs
Flour
Olive Oil
Nettle omelette
Method: Boil the nettle greens in plenty
of water. After cooking, drain well to
remove as much of the cooking liquid as possible. Finely chop the nettle greens and
add the cheese, eggs, grated nutmeg, a
little marjoram, salt and pepper to taste.
Form a rather thick batter. Make nut size balls
of the batter and roll in white flour and bread crumbs. Deep fry in olive oil. Serve over lettuce leaves.
