Ingredients (for 4 servings): 
Dried Val Borbera beans 
Extra virgin olive oil 
Wine vinegar
Salt to taste
Method: Soak the white Val Borbera beans in large quantity of tepid water for 18/24 hours. Then cook them in salt water and leave to cool in cooking water. Finely chop the parsley and garlic. Add a generous amount of the extra virgin olive oil, vinegar and salt. Drain the beans and serve tepid with the sauce.
